81 Virgin Olive Oil Benefits The beneficial effects of extra virgin olive oil (EVOO) for dressing have been clearly demonstrated. There is, however, a belief that EVOO is not the most suitable oil for cooking. In this chapter we present a summary of the most recent scientific evidence that demonstrates the benefits of using this oil for different types of recipes such as sautéing, frying, or cooking vegetables and greens.
