The Mediterranean diet is a practical example of the benefits of olive oil, particularly the extra virgin one: it contributes to the palatability of many dishes, encourages the consumption of healthy foods such as vegetables and greens, and increases the nutritional value of salads and stews. The Mediterranean diet is a healthy diet, not only for the type of food ingested, but for the cooking processes involved, and the way it is eaten. For all these reasons, it is crucial to publicize the benefits of extra virgin olive oil and promote its consumption among young people, and that prices do not keep them from consuming it. The excellent characteristics of some virgin olive oils have promoted their inclusion as Protected Designations of Origin (in a similar manner to good wines) as shown in Figure 1.5.1. Claude Fischler, an eminent food sociologist, pointed out that the historian Jean-Louis Flandrin referred to olive oil as the “lean fat” when compared to lard and tallow. Indeed, olive oil does make food simpler and lighter than other fats.
