OLIVE OILS AND HEALTH 88 Olive oil is undoubtedly one of the most representative agri-food products of the Mediterranean Basin countries. In recent decades, Spain has been able to combine its competitive marketing advantage with its traditional knowledge of olive cultivation. As a result, it is by far the world’s greatest olive oil producer. Despite such a clear leadership, however, there are many diverse and challenging factors currently facing this agri-food production. This chapter briefly reviews the current socioeconomic and institutional frameworks conditioning the production and consumption of olive oil. In addition, it analyses the main economic, social, environmental, territorial, and health implications for this product at national level.
