The glossary contains both individualised terms and terms grouped within a single topic. A term is individualised when there are no other terms among the remaining 532 in the glossary that are conceptually related to it. When several terms are conceptually related, they have been grouped within the same topic so that a reader interested in one of them may, if they wish, also learn about the other related terms and the topic as a whole. • The definitions of the individualised terms appear in the same place as the term itself in alphabetical order. For example, the term polycyclic aromatic amines: POLYCYCLIC AROMATIC AMINES Polycyclic aromatic amines are chemical compounds formed when meat, poultry, or seafood are cooked at high temperatures, such as during pan-frying or grilling over direct flame. They are characterised by having one or more aromatic rings in which one of the carbon atoms is replaced by a nitrogen atom. Scientific studies have provided evidence that prolonged intake of these compounds may increase cancer incidence. • Grouped terms can be found in two places: 1. In alphabetical order, with a “cross-reference” indicating where they are grouped within a topic. For example, the term organoleptic quality appears first as: ORGANOLEPTIC QUALITY (see ORGANOLEPTIC) That is, it is arranged in alphabetical order, with the cross-reference (see ORGANOLEPTIC) directing the reader to the topic where its full definition is provided. 2. Also, the term organoleptic quality is found in a definitive second location, where it is grouped with other related terms and where its description is provided. Therefore, when the term organoleptic quality appears in a chapter, if the reader wishes to know its meaning, they can find it in the glossary within the “ORGANOLEPTIC” topic, which is also arranged in alphabetical order.
