OLIVE OILS AND HEALTH 212 The proposed new MD pyramid not only recomends the type and frequency of food for a balanced nutrition, but also reinforces the fact that it should be done responsibly in an evironmentally sustainable manner. This model has been developed by the “International Foundation of Mediterranean Diet” in collaboration with the “FAO” and “CIHEAM”, both “United Nations Agencies” (Figure 18.2). Figure 18.2. Mediterranean diet pyramid, environmentally respectful and sustainable. © 2016 International Foundation of Mediterranean Diet Authors: IFMeD Scientific Committee No restriction for pyramid use and broadcasting The main novelty of this pyramid is the images focusing on the relevance of local products, taking into account respectful systems for agriculture, cattle, and fishing, preserving traditional recipes, and avoiding the environmental impact of industry and transportation. Such visual tools focus the consumer’s attention on the environmental aspects of feeding, for instance, to eat fish not more than twice a week and be aware of the type of fish selected. In addition to sustainable feeding recommendations, the new pyramid highlights legume consumption which is now recommended daily, as opposed to weekly in the previous model. In this way, legume consumption increases, animal protein consumption decreases, feeding sustainability increases, and the environmental impact is reduced. It is an important change for a key food. In 2016 the FAO celebrated the world year for legumes. The pyramid base is composed of water (minimum 6 glasses/day) and infusions. The next level refers to food which should be present in the two main daily meals: olive oil, fruit, vegetables, and carbohydrates such as cereals, bread, pasta, and rice.
