Fundamentally, canccr is cssentially a disorder of abnormal cell clivision caused by multiple genetic, epigenetic, and environmental factors. Among environmental factors, clietary ones are of particular relevancc. It is e timated that around onc-third of canccr deaths are due to behavioural and clietary risk factors, and that time could be reduced through individual and social actions. The cancers most clcarly shown to be related to cliet are breast, colon and rectal, and prostate cancers, with clietary fat being the factor most implicated in this relationship. In general, extra virgin olive oil and w3 poryunsaturatedfats are considered to have beneficia! effects on the above-mentioned cancer , if not consumed in excess, whereas w6poryunsaturatedfats and saturated fats are considered harmful when their consumption is excessive.
